Preheat your oven at 355 degrees F (180 degrees C) with the fan off.
In a large bowl add enough Olive Oil (to taste) to cover the potatoes. Add in the Garlic Powder (1 tablespoon), Dried Oregano (1 tablespoon), Dried Tarragon (1 tablespoon), Dried Thyme (1 tablespoon), Salt (1 tablespoon) and Smoked Paprika (1 tablespoon).
Clean the Potato (8) without removing the skin and cut into wedges. Add into the bowl and toss until thoroughly coated in the oil and spices.
Once the wedges are covered in oil and spices, remove them and place on a baking rack with tray. Add a little bit of water on the bottom of the pan.
Bake the potato wedges at 355 degrees F (180 degrees C) for 45 minutes.
Once baked, remove from the oven and let them cool a little before serving. Enjoy!
