Arroz a Banda (Seafood Rice)

This recipe has humble origins on the coast of the Mediterranean. Here we take this classic up a notch by adding even more seafood.

1 kilogram White Rice
16 Langostino
24 cooked Fresh Mussels
4 Calamari
500 gram Tomato Sauce
to taste Fish Broth
to taste Food Coloring
to taste Olive Oil

STEP 1
Clean up and cut the Calamari (4) into small pieces. Add enough Olive Oil (to taste) to cover the bottom of a large pan, and once hot add the calamari and the Langostino (16).
STEP 2
Once half way cooked (a few minutes), add 2-3 splashes of the Fish Broth (to taste) and let the calamari finish cooking. Add the Tomato Sauce (500 gram) and after a few minutes of cooking add the White Rice (1 kilogram) and a couple dashes of Food Coloring (to taste). Mix everything well.
STEP 3
Next, using the same container you used to add the rice, add in 2 times the amount of Fish Broth (to taste). Then let the rice cook for 20 minutes.
STEP 4
Let it cool for 5 minutes and then serve with Fresh Mussels (24) on top.
