Author's Notes

Store in an airtight glass container in the refrigerator. The sauce will keep for up to 1 week when refrigerated. Stir before each use as ingredients may separate.

For longer storage, freeze in ice cube trays for up to 3 months.

If you can't find tree tomatoes, you can substitute with a mixture of 2 regular tomatoes (for base), 1 tart plum or apricot (for acidity), and 1 tbsp tamarind paste (for unique tangy flavor).

Boil Tamarillos (4) for 5 minutes, then peel and remove seeds.

Add the tamarillos, Rocoto Peppers (2), Red Onion (1/2), Garlic (1 clove), Fresh Cilantro (2 Tbsp), and Lemon Juice (2 Tbsp) to a blender. Blend until smooth.
