Step 1
Preheat oven to 200 degrees F (93 degrees C). Line a baking sheet with parchment paper.
Step 2
In a bowl, combine
Raw Cashews (1 3/4 cups)
,
Tom Yum Chili Paste (1 Tbsp)
,
Coconut Oil (1 Tbsp)
, juice from
Lime (1/2)
,
Granulated Sugar (1/2 Tbsp)
,
Fresh Cilantro (1 tsp)
, and the white portion of the
Lemongrass (1 stalk)
. Stir well until all of the cashew nuts are coated.
Step 3
Spread cashews on the baking sheet.
Step 4
Roast for 20 minutes, stirring every 5 minutes or so.
Step 5
When the cashew nuts have cooled completely, top with
Kaffir Lime Leaf (1)
. Serve and enjoy!
