Preheat oven to 200 degrees F (93 degrees C). Line a baking sheet with parchment paper.

In a bowl, combine Raw Cashews (1 3/4 cups), Tom Yum Chili Paste (1 Tbsp), Coconut Oil (1 Tbsp), juice from Lime (1/2), Granulated Sugar (1/2 Tbsp), Fresh Cilantro (1 tsp), and the white portion of the Lemongrass (1 stalk). Stir well until all of the cashew nuts are coated.
step 2 In a bowl, combine Raw Cashews (1 3/4 cups), Tom Yum Chili Paste (1 Tbsp), Coconut Oil (1 Tbsp), juice from Lime (1/2), Granulated Sugar (1/2 Tbsp), Fresh Cilantro (1 tsp), and the white portion of the Lemongrass (1 stalk). Stir well until all of the cashew nuts are coated.
