Preheat oven to 200 degrees F (93 degrees C). Line a baking sheet with parchment paper.
In a bowl, combine Raw Cashews (0.5 pound), Tom Yum Chili Paste (1 tablespoon), Coconut Oil (1 tablespoon), Lime Juice (1 tablespoon), Granulated Sugar (2 teaspoon), Fresh Cilantro (1 teaspoon), and the white portion of the Lemongrass (1 stalk). Stir well until all of the cashew nuts are coated.
Spread cashews on the baking sheet.
Roast for 20 minutes, stirring every 5 minutes or so.
When the cashew nuts have cooled completely, top with Kaffir Lime Leaf (1). Serve and enjoy!
