The whole point of the chilaquiles is the sauce. Usually a mixture of tomatoes, garlic, onion, and my personal favorite, chipotle adobo peppers. All of this is simmered together and then tossed with tortilla chips, quinoa, black beans, and fried eggs for good measure.

Tomato Sauce

Fire Roasted Diced Tomatoes

Quinoa , cooked

Black Beans , drained, rinsed

Garlic , minced
to taste
Radishes , sliced
to taste

Directions

Step 1
In a medium skillet preheated to medium-high heat, add the Olive Oil (2 Tbsp) , Yellow Onion (1) , Garlic (1 clove) , Salt and Pepper (to taste) . Saute for a few minutes until softened.
Step 2
Add the Tomato Sauce (1 can) , Fire Roasted Diced Tomatoes (1 can) , Chipotle Peppers in Adobo Sauce (1) , and cook for another few minutes making sure to stir to combine everything. Season to taste.
Step 3
Meanwhile, place corn Tortilla Chips (3 cups) into a large skillet or serving tray. Sprinkle the Quinoa (1 cup) and Black Beans (1 can) on top. Pour the tomato mixture over and give the chips a toss to make sure everything is coated.
Step 4
Garnish with crumbled Queso Fresco (to taste) , Fresh Cilantro (to taste) , Radishes (to taste) , Jalapeño Peppers (to taste) , and Eggs (3) .
