In a large fry pan, heat Olive Oil (1 Tbsp). Sauté Red Onion (1/2 cup), Bell Pepper (3/4 cup), Butternut Squash (1 cup), Arugula (2 cups), and Ham (1 cup) for about 4-5 minutes until onions and peppers are softened.

Transfer veggie mix to a baking dish sprayed with nonstick spray.

In a large bowl, whisk together the Eggland’s Best Free Range Eggs (8), Milk (1/3 cup), Simply Organic Black Pepper, Medium Grind (1/2 tsp), and Simply Organic Onion Powder (1 tsp). Pour over the veggie mixture.

Sprinkle with Shredded Cheese (2/3 cup).
