Preheat the oven to 375 degrees F (190 degrees C). Sauté the Onion (1) in a medium, oven proof frying pan with Olive Oil (1 Tbsp) until caramelized, then add the roasted Sweet Potatoes (2) and Fresh Baby Spinach (1 cup).

Whisk the Eggland’s Best Pasture Raised Eggs (6) with Salt (to taste) and Simply Organic Black Pepper, Medium Grind (to taste). Pour over the vegetables and stir to combine.
