Wash and remove the stems of the Heirloom Tomatoes (4). Then slice into wedges and slices. Place the tomatoes in a large bowl.

Slice the Red Onion (1/2) and place in the bowl.

Chop the Fresh Parsley (4 Tbsp) and place in the bowl.

Add the Shallot (1) and Garlic (1 clove) to a small bowl, along with the Olive Oil (1/3 cup), juice from the Lemon (1), Crushed Red Pepper Flakes (as needed), and Dried Oregano (as needed), and Salt (as needed). Whisk to form your simple dressing. Taste for salt and adjust accordingly.

Pour the dressing onto the salad and gently mix. Top with Feta Cheese (3 Tbsp) and enjoy.
