Wash and remove the stems of the Heirloom Tomato (4). Then slice into wedges and slices. Place the tomatoes in a large bowl.
Slice the Red Onion (1/2) and place in the bowl.
Chop the Fresh Parsley (1/4 cup) and place in the bowl.
Add the Shallot (1) and Garlic (1 clove) to a small bowl, along with the Olive Oil (1/3 cup), juice from the Lemon (1), Crushed Red Pepper Flakes (1/2 teaspoon), and Dried Oregano (1/2 teaspoon), and Salt (1/3 teaspoon). Whisk to form your simple dressing. Taste for salt and adjust accordingly.
Pour the dressing onto the salad and gently mix. Top with Feta Cheese (3 tablespoon) and enjoy.
