Step 1
Wash and remove the stems of the
Heirloom Tomatoes (4)
. Then slice into wedges and slices. Place the tomatoes in a large bowl.
Step 2
Slice the
Red Onion (1/2)
and place in the bowl.
Step 3
Chop the
Fresh Parsley (1/4 cup)
and place in the bowl.
Step 4
Add the
Shallot (1)
and
Garlic (1 clove)
to a small bowl, along with the
Olive Oil (1/3 cup)
, juice from the
Lemon (1)
,
Crushed Red Pepper Flakes (1/2 tsp)
, and
Dried Oregano (1/2 tsp)
, and
Salt (1/4 tsp)
. Whisk to form your simple dressing. Taste for salt and adjust accordingly.
Step 5
Pour the dressing onto the salad and gently mix. Top with
Feta Cheese (3 Tbsp)
and enjoy.
