step 1
In a bowl, add Water (1/4 cup) and Pandan Extract (as needed) to the Snowskin Flour (1 1/2 cups). Mix it with your hands in a circular motion.

Knead the Palm Shortening (3 Tbsp) into the dough.

Separate into 8 equal sized balls, approximately 25g each. Set it in the fridge. This will make the dough easier to work with. Remember to keep some dough for decorating the character's features.

Mix together Pepitas (1/3 cup) and Lotus Seed Paste (1/2 cup) until they are thoroughly combined. Divide them into 25g balls and roll them into an oval shape.

Color the snow skin to your desired colors with Blue Food Coloring (3 drops), Pink Food Coloring (3 drops), Yellow Food Coloring (3 drops), Black Food Coloring (3 drops). Roll out the snow skin dough into a flat disc.

Place the filling and wrap it with the snow skin. Pinch away any excess.

Cut and shape the remaining snow skin. Decorate your mooncake.

Repeat the process for your other characters.

To keep the shape, chill before serving. Enjoy!
