Coconut Milk
1/2 cup
Unsweetened Cocoa Powder
1/2 cup
Coconut Oil
1 1/2 cups
2 cups
Unsweetened Shredded Coconut
Optional Additions
1/2 cup
Chopped Almonds

Step 1
Combine the Coconut Milk (1/2 cup) , Unsweetened Cocoa Powder (1/2 cup) , Coconut Oil (1/2 cup) and Coconut Sugar (1 1/2 cups) in a larger saucepan. If using Almond Butter (1/2 cup) , add it now too.
Step 2
Cook the mixture over medium-high heat, stirring constantly until it comes to a boil, then boil for 1 minute.
Step 3
Remove the mixture from the heat and stir in the Unsweetened Shredded Coconut (2 cups) , Large Coconut Flakes (1 cup) and Vanilla Extract (1/2 Tbsp) .
Step 4
From here, you can spoon the cookies onto a parchment-lined baking sheet to cool, or you can add Almonds (1/2 cup) or additions before forming the cookies.
