Cooking Instructions
1.
Prepare a cast iron pan, adding Vegetable Oil (as needed) until half the pan is full. Add Lard (2 Tbsp) if using.

In a large mixing bowl, add Cornmeal (2 cups), Granulated Sugar (2 Tbsp), and Salt (1 tsp).

Whisk everything together.

While whisking, add Water (2 1/2 cups).
5.
Add enough water to make a creamy batter. You may not finish the water, or you may need more. The cornmeal mixture comes together enough to spoon. Start heating your oil to about 375 degrees F (190 degrees C).
6.
Prepare a mixing bowl with warm tap water. Spoon hot cornmeal mixture in your hands that have been dipped in hot/warm water and then shape them into logs or patties. Gently place in the hot oil.
7.
Fry each in hot oil, turning once, until crisp and golden brown, about 5 minutes. Drain on paper towels.
8.
If you prefer it sweet, top with some sugar and enjoy!
