Author's Notes

Serves 16 bars.

For the sweet potatoes, you can peel, boil and mash a fresh sweet potato, or use organic canned sweet potato or yams. I’ve used both options, as well as part of a carrot/sweet potato toddler pouch when in a pinch, and they’ve all turned out great!

Cooking Instructions

step 1
Preheat oven to 350 degrees F (180 degrees C). Grease an 8x8-inch pan with Coconut Oil (as needed).
step 2
Add Creamy Peanut Butter (1 cup), Sweet Potatoes (4 Tbsp), Raw Cane Sugar (2/3 cup), and Vanilla Extract (1 tsp) to a large bowl. Stir until well mixed and a smooth consistency is reached.
step 3
To a small bowl, add Oat Flour (1/3 cup), Baking Soda (1 tsp), Sea Salt (1/8 tsp), and Chocolate Chips (1/3 cup), gently whisk to combine.
step 4
Add dry ingredients to peanut butter mixture, then stir until well combined. Spread evenly into greased 8x8-inch pan.

step 5
Top with 2 Tbsp of chocolate chips, gently pressing into the batter, then bake 10 minutes. The bars will look underdone, which is exactly what you want!
step 6
Allow them to cool 20 minutes or so before eating. They’ll firm up as they cool and be rich, fudgy, and moist!
