Preheat oven to 350 degrees F (176 degrees C). Grease an 8x8-inch pan with Coconut Oil (to taste).
Add Creamy Peanut Butter (1 cup), Sweet Potato (1/4 cup), Raw Cane Sugar (2/3 cup) and Vanilla Extract (1 teaspoon) to large bowl. Stir until well mixed and a smooth consistency is reached.
To a small bowl, add Oat Flour (6 tablespoon), Baking Soda (1 1/2 teaspoon), Sea Salt (1/8 teaspoon) and Chocolate Chips (1/3 cup), gently whisk to combine.
Add dry ingredients to peanut butter mixture, then stir until well combined. Spread evenly into greased 8x8 pan.
Top with remaining Chocolate Chips (2 tablespoon), gently pressing into batter, then bake 10 minutes. The bars will look underdone, which is exactly what you want! Allow them to cool 20 minutes or so before eating. They’ll firm up as they cool and be rich, fudgy and moist!
