Make sure you have a fish spatula handy. It has more bend than a normal metal spatula which enables you to get under a delicate piece of fish more easily.

Heat your pan over medium heat WITHOUT OIL. As the pan heats up, pat the Salmon Fillet (1 in) dry with a paper towel.

Add Vegetable Oil (3 Tbsp). Don't be afraid to add more if you are using a large pan.

Immediately after adding the oil, lay the skin-side of the salmon fillet down away from you. Season the top with Kosher Salt (1 pinch) and Freshly Ground Black Pepper (1 pinch). Cook for 3 to 4 minutes.
