Wash and slice the Fresh Strawberry (8) into thin slices. Peel and slice Mango (1) into matchsticks. Set aside. Slice the Fresh Mint Leaves (3 tablespoon).
Mince the Fresh Mint Leaves (2 teaspoon). Keep two sets of mint separate.
Fill 9-inch pie plate with warm water. Dip one of the Rice Paper Wrapper (8) into water for 5 to 10 seconds or until pliable; pat dry with tea towel and carefully place on work surface.
Lay one piece of the Boston Lettuce (8 piece) on rice paper wrapper; layer one-eighth each of the strawberries, mango, and sliced fresh mint leaves.
Fold one bottom edge over filling; fold sides into center and roll up to enclose filling. Repeat with remaining ingredients.
In a separate bowl, whisk together Lime Juice (3 tablespoon), Honey (2 tablespoon) and finely chopped fresh mint leaves down along center.
Cut rolls in half diagonally and serve with dipping sauce.
