Step 1
Preheat the oven to 350 degrees F (180 degrees C).
Step 2
In a small bowl, combine the
Fresh Strawberries (1 cup)
and
Granulated Sugar (1 Tbsp)
. Toss to combine and set aside.

In a medium bowl, combine the
Mascarpone Cheese (1 cup)
,
Greek Yogurt (1/2 cup)
,
Powdered Confectioners Sugar (1/2 cup)
, and
Almond Extract (1 tsp)
.
Step 4
Use a hand mixer on medium high speed to combine and whip the ingredients together. Continue to whip until light and fluffy. Set aside.
Step 5
Place 10 of the
Chocolate Wafer Cookies (12)
in a zip top sandwich baggie and seal it. Reserve the other two cookies for garnish.
Step 6
Use a rolling pin or the flat side of a meat tenderizer to crush the cookies into fine crumbs. Set aside.
Step 7
Lay the
Sliced Almonds (1/4 cup)
out on a cookie sheet. Cook until lightly toasted and golden, about 5 to 8 minutes. Set aside.
Step 8
In a clear parfait glass or wine glass with a wide mouth, sprinkle a tablespoon of the crushed chocolate wafer cookies.
Step 9
Top with 3 tablespoons of the hulled and diced strawberries.
Step 10
Pipe about 1-inch of mascarpone cream on top of the berries.
Step 11
Repeat with cookies, berries and cream. Garnish with a sprinkle of toasted almonds,

, and a chocolate wafer.
Step 12
Cover and refrigerate. Remove parfaits from the refrigerator 30 minutes to an hour before serving so the cream softens a bit.
