Step 1
Preheat the oven to 300 degrees F (150 degrees C). Line 2 large baking sheets with parchment paper and set aside.

In a large bowl combine the
Old Fashioned Rolled Oats (2 1/2 cups)

Roasted Shelled Pistachios (1 cup)
,
Sunflower Seeds (1/2 cup)
,
Flaxseeds (2 Tbsp)
,
Sweetened Coconut Flakes (1 cup)
and
Kosher Salt (1/2 tsp)
. Mix well and set aside.
Step 3
In a small saucepan, combine the
Orange Blossom Honey (1/3 cup)
,
Extra-Virgin Olive Oil (1/3 cup)
, and
Brown Sugar (1/2 cup)
. Heat over medium high heat, stirring occasionally until mixture comes to a rolling boil and the sugar is dissolved.
Step 4
Pour the honey mixture over the oats and stir until thoroughly combined.
Step 5
Add the
Dates (1 cup)
and mix well.
Step 6
Divide the granola between the two sheet pans and spread it out into a single layer. Bake for 10 minutes, stir the granola and arrange in a single layer again.
Step 7
Bake for a second 10 minutes and stir.
Step 8
Spread the granola into a single layer and bake for an additional 5-10 minutes until golden brown.
Step 9
Add the dates to the granola and toss to combine. Let cool to room temperature until dry and crisp.
Step 10
Store in an airtight container. Enjoy!
