Preheat oven to 400 degrees F (205 degrees C).
On a small baking tray, roast unpeeled Garlic (4 clove) for 30 minutes. You may want to roast a few extra cloves just in case some burn, feel free to roast a whole head of garlic if you like!
Once the garlic is cooked, allow to cool and then remove the skin from 4 cloves. Using the back of your knife, mash garlic and Coarse Salt (1 teaspoon) into a paste on a cutting board.
In a medium bowl whisk together Mayonnaise (1 cup), Olive Oil (2 tablespoon), juice of the Lemon (1/4), and garlic paste.
Season to taste with Salt (to taste) if needed. Store in an airtight container in the fridge for 1-2 weeks.
