In a small mixing bowl, combine Ricotta Cheese (1/4 cup) and Lemon (1).

Add Mayonnaise (1/4 cup) to the mixture and stir until combined. Add Salt (to taste) and Ground Black Pepper (to taste), then set the mixture aside.

Bring a medium saucepan of water to a boil. Add the Cheese Tortellini (1 pckg) and cook according to package directions, then remove from the water with a slotted spoon or drain with a colander. Set aside in a large bowl.

While you’re cooking the pasta, cover a small bowl of Frozen Green Peas (1/2 cup) with a wet towel and microwave for 2 to 4 minutes until soft.

Once pasta is drained and peas are cooked, use a spatula to gently combine in a medium bowl with the ricotta mixture and the sliced Fresh Mint (1 bunch).

Garnish pasta salad with lemon zest before serving.
