In a small mixing bowl, combine Ricotta Cheese (1/4 cup) and Lemon Juice (2 tablespoon).
Add Mayonnaise (5 tablespoon) to the mixture and stir until combined. Add Salt (to taste) and Ground Black Pepper (to taste), then set the mixture aside. (Tasting the mixture is very important as this will be the main flavor of your dish.)
In a medium saucepan bring water to a boil. Once boiling add a large pinch of salt, then cook the Cheese Tortellini (250 gram) following the package instructions. When the pasta puffs up and begins to float to the top, they’re done. Once cooked, drain and set aside.
While you’re cooking the pasta, cover a small bowl of Green Peas (1/2 cup) with a wet towel and microwave for 2 to 4 minutes until soft. Pick the leaves off of your bunch of mint, then gather leaves together and slice into thin strips.
Once pasta is drained and peas are cooked, gently combine in a medium bowl. Add the Ricotta mixture and use a rubber spatula to gently combine with the green peas and pasta.
Garnish with chopped Fresh Mint (1 bunch) and some zest of the Lemon (1).
