In a medium mixing bowl, use a hand mixer to combine the
Cream Cheese (1 cup)
Nutella® (1/2 cup)
until silky smooth.
Transfer the Nutella cream cheese to the bowl of a stand mixer and add the
Heavy Cream (3 cups)
. Mix on low speed to combine, then slowly increase the speed of medium. Mix until firm peaks form, about 4-5 minutes.
To assemble the cake, arrange
Chocolate Chip Cookies (3 pckg)
flat in an 8 or 9-inch springform pan, covering as much of the bottom as possible. Break up a cookie or two to fill in any gaps.
Spread a fifth of the nutella whipped cream over the cookies in an even layer. Repeat process with layers of cookie and layers of cream until there are 5 layers of each, finishing with a layer of cream. Smooth the top.
Cover the cake tightly with plastic wrap and refrigerate overnight. Make the decoration by combining
Nutella® (1 Tbsp)
Coconut Oil (1 Tbsp)
in a small bowl and microwaving for 15-20 seconds until melted and well mixed.
Run a sharp knife around the outside of the cake to loosen it. Remove the sides of the pan. Using a spoon, drizzle the top and sides of the cake with the Nutella mixture. The mixture should harden within a minute or two, but if it doesn't, pop it in the freezer for a few minutes.
To make an optional cookie rim, simple cut a circle out of parchment that's slightly smaller than your cake. Place the parchment on top of your cake and sprinkle
Chocolate Chip Cookies (2)
over the uncovered part of the cake. Remove the parchment.
Slice and serve immediately, or refrigerate until party time.
