Place Unsweetened Shredded Coconut (2 cups), Medjool Dates (10), 2 tablespoon of Coconut Oil (3 Tbsp) and Salt (1/2 tsp) in a food processor and mix until combined.

Take out one teaspoon of the mixture and form a ball to check the texture. If the mixture has difficulty forming a ball and is too dry, add more coconut oil.

Taste the mixture for the right balance of sweet and salty, add the remaining salt if required.

Place half the mixture into a silicone slice mould or line a slice tin with baking paper. Press down firmly and use the back of a spoon to even the layer out.

Scatter the Cacao Nibs (1 Tbsp) over the top then pour over with the rest of the mixture. Again, use a spoon to even the layer out.

Place in the fridge for approximately 30 minutes until firm. You should be able to lift the entire slice out easily. Cut into even bite-sized square or roll into balls. Store in the fridge for up to 2 weeks.
