Nut Free Sweet Salty Coco Cacao Bites

Recipe
5.0

This is a great 5 ingredient snack. It is refined sugar-free and sweetened only with Medjool dates. The cacao nibs add a nice chocolatey crunch which isn’t bitter at all with the sweetness of the dates and the hint of salt just brings out all the flavours. The best part is it takes less than 10 mins to make a couple of weeks worth of lunch box treats.

step 1
Place Unsweetened Shredded Coconut (2 cups), Medjool Dates (10), 2 tablespoon of Coconut Oil (3 Tbsp) and Salt (as needed) in a food processor and mix until combined.

Taste the mixture for the right balance of sweet and salty, add the remaining salt if required.
step 4
Place half the mixture into a silicone slice mould or line a slice tin with baking paper. Press down firmly and use the back of a spoon to even the layer out.
