This bowl, oh this bowl is SO creamy and flavourful it will give you that extra push to get you out of bed on a Monday morning! The recipe is dairy-free and fully vegan. Of course you can use cow milk if you prefer, but I would not recommend to replace the coconut milk, as it does actually add some special flavour and creaminess to the recipe.

Cooking Instructions

Slice up the Red Apple (1), and remove the central seeds.

In a skillet, melt the Coconut Oil (2 Tbsp) and Maple Syrup (1 oz).

Add the sliced apple and cook for 1 minute, then add Orange Juice (1 Tbsp). Let cook for 4 min or until apple turns soft. Set aside

In a saucepan, bring Coconut Milk (7 oz), Soy Milk (3.5 oz), Water (3.5 oz), Star Anise (1), Vanilla Extract (as needed), and Ground Cinnamon (as needed) to a boil

Add the Old Fashioned Rolled Oats (1 cup). Turn down to low heat, let the oats simmer while you stir with a whisk (about 10-15 min). When creamy, add the Almond Butter (1 Tbsp) and stir it in. Turn the heat off.
6.
Pour the oatmeal in 2 serving bowls. Top with the cooked apple and the juice. Serve it right up! (Don't eat the star anise, it's just for flavoring).
Author's Notes
If you have any leftovers, just store them in your fridge and heat them up in your microwave when needed!
