Preheat oven to 350 degrees F (180 degrees C). Coat a 5x9 loaf pan with cooking spray and set aside. Finely chop the Onion (1/3 cup). Crush the Ritz® Crackers (1 cup). Beat the Egg (1).
In a large bowl, combine the Ground Beef (2 pound), onion, Ritz® Crackers, beaten egg, Milk (1 cup), Ketchup (1/2 cup), Garlic Powder (1/2 teaspoon), Salt (1 teaspoon) and Ground Black Pepper (1/2 teaspoon). Mix together with your hands until combined.
Pour the mixture into the prepared pan and spread evenly. Place the pan on a rimmed baking sheet and bake in the preheated oven for 1 1/2 hours.
In a small bowl, mix Ketchup (3/4 cup), Brown Sugar (1/4 cup), Apricot Preserves (1/4 cup), and Worcestershire Sauce (1 tablespoon). Mix well.
Spread half of the mixture evenly over the meatloaf halfway through baking.
Reserve the remainder of the sauce for dipping and/or topping. Let meatloaf sit for 15 minutes before slicing and serving.
