Place the Unsweetened Shredded Coconut (3 cup) in a food processor.
Blend on high until it begins to form a coarse paste, stopping the food processor and scraping down the sides of the bowl as you go.
Add Maple Syrup (4 tablespoon), Coconut Oil (1 teaspoon), and Peppermint Oil (1 teaspoon).
Blend on high for a few more minutes until well combined.
Scooping a tablespoon of the mixture at a time, firmly pack together, shape into a ball and then flatten into a disc. Place on a baking paper-lined tray or cooling rack. This should make about 12 patties. Place in the refrigerator to harden.
Melt the Dark Chocolate (100 gram) along with the remaining Coconut Oil (1 teaspoon) Remove patties from the refrigerator and discard baking paper.
Using a fork, dip the patties into the melted dark chocolate. Tap off any excess chocolate and place on a cooling rack. Place back in the refrigerator to harden.
