Preheat oven to 320 degrees F (160 degrees C).
Mix Oats (4 cup), Chopped Pecans (1 cup), Unsweetened Shredded Coconut (1 cup), Ground Flaxseed (1/2 cup), Roasted Unsalted Sunflower Seeds (1/2 cup), Ground Cinnamon (1 teaspoon), and Salt (1 teaspoon) in a large bowl.
Whisk Coconut Oil (6 tablespoon) and Honey (2/3 cup) together and add to oats mixture.
Spread mixture onto two baking sheets and bake for approximately 25 minutes and stir a few times during baking.
For more crunch, reduce oven to 275 degrees F (140 degrees) and bake an additional 5 to 10 minutes. Allow it to cool.
