Mix Oats (1 cup), Chopped Pecans (4 Tbsp), Unsweetened Shredded Coconut (4 Tbsp), Ground Flaxseed (2 Tbsp), Roasted Unsalted Sunflower Seeds (2 Tbsp), Ground Cinnamon (as needed), and Salt (as needed) in a large bowl.

Whisk Coconut Oil (4 tsp) and Honey (8 tsp) together and add to oats mixture.

Spread mixture onto two baking sheets and bake for approximately 25 minutes and stir a few times during baking.
