Slice the 12 Month Reypenaer Gouda (4 ounce) and 3 Year Reypenaer Gouda (4 ounce). Rougly chop the Cipollini Onions in Balsamic Vinegar (5).
Preheat a panini press or heavy skillet over medium-low heat. Meanwhile, brush one side of each Country White Bread (4 slice) with a little of the Olive Oil (1 tablespoon).
Flip the bread slices over and spread on a spoonful of Fig Spread (1/4 cup). Top with a layer of onions.
Layer on the two cheeses.
Place the sandwich on the skillet and press down with a spatula. Grill for about 5 minutes, or until the bread is turning golden brown and the cheese is melting. Flip the sandwich and continue cooking until the cheese is melted.
Slice and serve immediately.
