No-Bake Coconut Peanut Butter Butterscotch Bites

You know, to satisfy two cravings. One being the sugar-coated butterscotch candy craving, and two being the delicious peanut butter-filled goodness craving.

Creamy Natural Peanut Butter

Instant Butterscotch Pudding Mix

Cooking Instructions

In a large bowl, add in Coconut Flour (1/2 cup) , Almond Meal (1/2 cup) , Unsweetened Shaved Coconut (1/2 cup) , Coconut Sugar (2 Tbsp) , Instant Butterscotch Pudding Mix (2 Tbsp) , and Vanilla Protein Powder (1/4 tsp) .

Then mix in your Creamy Natural Peanut Butter (1/3 cup) , Honey (1/3 cup) , Butter Extract (1/4 tsp) if using, and Vanilla Extract (1 tsp) . Mix well and roll into bite-size balls. Makes anywhere between 20-22 balls depending on size.

Next, coat the bites with extra Vanilla Protein Powder (to taste) or Instant Butterscotch Pudding Mix (to taste) if desired.

Then return to freezer. Freeze or keep in refrigerator to maintain freshness.

Author's Notes

If you want it even more like candy, feel free to add in crushed butterscotch candy to the mix. It’s definitely not as healthy but it does work!
