Author's Notes

Medjool dates are much creamier than small dried dates, so these are always the better option, in my opinion. However, medjool dates are often more expensive so regular dates will work just fine.

Blend the Almonds (1 cup) until they are ground into a flour-like substance. Add the Medjool Dates (1 cup) and blend until the mixture starts to clump. If it seems too dry, add in Coconut Oil (4 Tbsp) little by little.

Add the Raw Cacao Powder (2 Tbsp), Unsweetened Shredded Coconut (4 Tbsp) and Maple Syrup (1 tsp), Simply Organic Cinnamon, Ground (1 pinch), and Sea Salt (1 pinch) and pulse until combined.

Roll the mixture into small little balls, then roll the balls in the extra Unsweetened Shredded Coconut (4 Tbsp). Place the balls into a sealed Tupperware in the freezer for 1 hour to set.
