Add the Sweetened Shredded Coconut (300 gram) to the jug or bowl of your food processor and blend on high for about 5 minutes.
Scrape down the sides, add the Peppermint Oil (2 teaspoon) and Coconut Oil (1/4 cup) and continue blending on high for another 10 minutes. You will need to stop, scrape down the sides and continue blending.
Continue blending until you have a coarse paste.
Shape the paste into about 16 balls and place on a lined baking tray or chopping board.
Shape the balls into patties and then refrigerate until sold, around 30 minutes.
Remove the patties from the fridge and begin decorating them. Add a few drops of AmeriColor Flo-Coat™ (to taste) to the White Chocolate (200 gram).
Tint the chocolate with the AmeriColor Soft Gel Paste™ in Turquoise (to taste), AmeriColor Soft Gel Paste™ in Avocado (to taste) and AmeriColor Soft Gel Paste™ in Teal (to taste) until you reach a desired shade of blue.
Working quickly, dip each of the patties in the chocolate and place on a wire rack to set. Repeat so that each pattie is well-coated in chocolate.
You might need to melt the chocolate again, which will allow you to tint half of it a darker shade of blue. Use this to coat dip the patties again to obtain a marble effect.
Melt the chocolate again if need be, and then make it even darker using the AmeriColor Soft Gel Paste™ in Teal (to taste).
Using a fork, quickly splash patties with the darker chocolate.
Finish off decorating the patties by using a clean paintbrush to fleck each one with AmeriColor Soft Gel Paste™ in Bright White (to taste) and gently sprinkle with Edible Silver Glitter Dust (to taste).
Allow to set in the refrigerator for another 30 minute or overnight. Serve and enjoy!
