Juice the Lemon (1/2) and set aside.
Combine Extra-Virgin Olive Oil (1 tablespoon), lemon juice, Salt (1/8 teaspoon), and Dried Mixed Herbs (1 teaspoon) in a bowl. Stir to mix all of the ingredients together.
Dip the Cod (120 gram) into the mixture, coating it well on both sides.
Let stand for about 20 minutes.
Coat the fish in Panko Breadcrumbs (2 tablespoon) then move it onto a baking tray and pour the remaining marinade on top.
Bake at 350 degrees F (180 degrees C) for about 30 minutes.
Remove from oven and serve, preferably with salad or pasta.
