Rhubarb

Cooking Instructions

Combine the Rhubarb (4 cups), Granulated Sugar (1 cup), and Water (1 cup) in sauce pan and bring to a boil. Lower the heat to a simmer and cook until the rhubarb is soft and the liquid has thickened slightly. About 20 minutes.

Set a mesh strainer over a bowl. Pour the rhubarb through the strainer until most of the liquid is in the bowl. Press the solids a bit with the back of a spoon to extract more syrup.
Pour into a clean jar. Refrigerate.

In a shaker combine the Vodka (2 fl oz), Rhubarb syrup, Just Jan’s® Organic Strawberry Spread (1 Tbsp), and the juice of a Lemon (1/2). Shake until well combined. Pour into a glass and add ice. Top with Club Soda (to taste).
