Step 1
Preheat the oven to 350 degrees F (180 degrees C).
Step 2
In a medium saucepan, combine the
Cherries (3 cups)
,
Honey (1 Tbsp)
,
Balsamic Vinegar (1/2 tsp)
,
Fresh Basil (2 Tbsp)
, and a pinch of
Kosher Salt (to taste)
.
Step 3
Cook over medium-low heat for 5 minutes, stirring occasionally until the cherries are just starting to release their juice. Remove from the heat and let cool slightly.
Step 4
Meanwhile, arrange
Baguette (1)
on a sheet pan. Brush lightly with
Extra-Virgin Olive Oil (to taste)
, sprinkle with
Kosher Salt (to taste)
and
Freshly Ground Black Pepper (to taste)
and bake for 10 minutes, or until lightly toasted.
Step 5
To assemble the crostini, spread a layer of
Goat Cheese (1 cup)
onto each baguette slice, then top with a spoonful of cooked cherries. Sprinkle the remaining
Fresh Basil (2 Tbsp)
over the crostini and serve immediately.
