Author's Notes

Depending on how you plan to serve this, either finely shred or finely chop the smoked turkey for sandwich filling, or coarsely shred or dice for serving as a salad on greens. This Smoked Turkey Salad will loosen up after it is all mixed together – for maximum flavor, prepare and refrigerate at least 30 minutes before serving. You can prepare the smoked turkey and dressing ahead of time up to a day ahead of time – just mix them together an hour before serving and chill; add slivered almonds right before serving.

Step 1
Combine Mayonnaise (2/3 cup) , Greek Yogurt (1/3 cup) , Apricot Preserves (1/3 cup) , White Wine Vinegar (1 Tbsp) , Garlic (1 clove) , and Smoked Paprika (1 tsp) in a large mixing bowl and whisk until blended.
Step 2
Add Deli Smoked Turkey (3 cups) , Gruyère Cheese (1/2 cup) , Celery (1/2 cup) , Red Grapes (1 cup) , and Dried Cranberries (1/2 cup) except for slivered almonds to salad dressing, and stir gently until evenly coated and combined.
Step 3
Chill until ready to serve. Right before serving, stir in the Slivered Almonds (1/3 cup) – this will keep them from getting soggy. Serve with Salad Greens (to taste) , Croissants (to taste) , Slider Buns (to taste) , or Bread (to taste) .
