Preheat your oven to 350 degrees F (180 degrees C).
In a bowl combine the Ground Flaxseed (1 tablespoon) and Water (3 tablespoon), stir, and let sit for a few minutes until it thickens.
In a separate bowl stir together Apple Sauce (80 gram) and Chia Seeds (1 tablespoon).
Grate the zest of 2 Water (120 milliliter). In a bowl of your electric mixer whisk the chia mix, flaxseed egg, juice of 1 lemon, Soy Milk (60 gram), Lemon (2), and Coconut Oil (50 gram) together.
Add the Coconut Sugar (100 gram), Cake Flour (160 gram), Whole Grain Flour (60 gram), Coconut Flour (20 gram), Baking Powder (1 teaspoon), Salt (1 pinch), and stir to combine.
Pour into greased baking pan and bake in a preheated oven at 350 degrees F (180 degrees C) for 50 minutes.
Once cooked, let the cake cool completely on a wire rack. Then dust with powdered sugar and some lemon zest.
