Vegan Lemon and Chia Seeds Ring Cake

In a bowl combine the Ground Flaxseed (1 Tbsp) and Water (3 Tbsp) , stir, and let sit for a few minutes until it thickens.

In a separate bowl stir together Apple Sauce (1/4 cup) and Chia Seeds (1 Tbsp) .

Grate the zest of 2 Lemons (2) . In a bowl of your electric mixer whisk the chia mix, flaxseed egg, juice of 1 lemon, Soy Milk (2 oz) , Water (1/2 cup) , and Coconut Oil (2 oz) together.

Add the Coconut Sugar (1/2 cup) , Cake Flour (1 cup) , Whole Grain Flour (1/2 cup) , Coconut Flour (8 tsp) , Baking Powder (1 tsp) , Salt (1 pinch) , and stir to combine.
