Preheat your oven to 400 degrees F (200 degrees C).
In a bowl add Honey (1/2 teaspoon), Flaxseeds (50 gram), Type 0 Flour (115 gram), and Water (100 milliliter). Add in Extra-Virgin Olive Oil (1 1/2 tablespoon), Salt (7 gram), and slowly pour in the Fine Semolina Flour (60 gram) mixing all the ingredients together first with a spoon and then with your hand. You should get a soft and smooth dough that is not sticking to your fingers.
On a floured surface roll out the dough 3-millimeter thick, cut off your crackers the shape and size you prefer. Lightly brush them with some extra-virgin olive oil.
Bake the crackers in a preheated oven at 400 degrees F (200 degrees C) for 12-15 minutes. Remove and let them cool down completely.
