Author's Notes

If you don’t have honey simple on hand, it’s so easy. Scout’s honor. Grab a jar and add equal parts honey and hot water. Shake until the honey is incorporated into the water so it resembles a simple syrup and is easy to pour. I love honey, but honey chunks are not ideal in a cocktail.

Cooking Instructions

Step 1
Pour the Honey Simple Syrup (0.75 fluid ounce), White Mezcal (0.75 fluid ounce), 0.75 oz of the juice of a Aperol (0.75 fluid ounce), and Lime (1) into a shaker.
Step 2
Add ice and shake vigorously for about 30 seconds. The tin portion of your shaker should be nice and cold.
Step 3
Strain into a chilled coupe glass. Optionally garnish with fresh herbs!
