Chop your Potato (1 kilogram) down into small chunks. Transfer the chunks to a mixing bowl, and put in the fridge for about half an hour.
In a small jug, mix together the Mayonnaise (1 cup), Sour Cream (1/2 cup) ,Dijon Mustard (1 tablespoon), Lemon Juice (1 tablespoon), and Honey (1 tablespoon). Season with Salt and Pepper (to taste).
Pour down your dressing over the potatoes, and gently toss everything together.
