Step 1
Chop your Potatoes (6 2/3 cups) down into small chunks. Transfer the chunks to a mixing bowl, and put in the fridge for about half an hour.
Step 2
In a small jug, mix together the Mayonnaise (1 cup) , Sour Cream (1/2 cup) , Dijon Mustard (1 Tbsp) , juice from Lemon (1) and Honey (1 Tbsp) . Season with Salt (to taste) and Ground Black Pepper (to taste) .
Step 3
Pour down your dressing over the potatoes, and gently toss everything together.
