I highly recommend serving this with lamb. Roasts, chops, meatballs - it's all delicious.

Directions

Step 1
Combine the Fresh Mint Leaves (1 cup) , Unsalted Pistachios (1/4 cup) , and Garlic (1 clove) in a food processor. Process until ground, then pour the Olive Oil (1/4 cup) in a steady stream until desired consistency achieved.
Step 2
Scrape out pesto into a bowl and fold in Feta Cheese (1/3 cup) . Add pinch of Sea Salt (to taste) tasting and adjusting as needed. If desired, a squeeze of Limes (to taste) is delicious.
Step 3
Transfer to an airtight container and serve.
