Combine the Fresh Mint Leaves (1 cup), Unsalted Pistachios (1/4 cup), and Garlic (1 clove) in a food processor. Process until ground, then pour the Olive Oil (1/4 cup) in a steady stream until desired consistency achieved.
Scrape out pesto into a bowl and fold in Feta Cheese (1/3 cup). Add pinch of Sea Salt (to taste) tasting and adjusting as needed. If desired, a squeeze of Limes (to taste) is delicious.
