Cooking Instructions

Preheat the oven to 350 degrees F (180 degrees C).

Slice the Peaches (3 1/2 cups) thinly, leaving the skin on for texture.

In a large bowl, add the peaches, Ground Cinnamon (as needed) , Vanilla Extract (as needed) , Chickpea Flour (1 Tbsp) , juice from Lemon (1) , Agave Syrup (2 tsp) , and Salt (1 pinch) . Mix well but ensure the peaches stay intact.

Add the Oats (3/4 cup) , Ground Flaxseed (2 Tbsp) , Chickpea Flour (2 Tbsp) , Slivered Almonds (1/3 cup) , Vanilla Extract (as needed) , Agave Syrup (2 tsp) , and Water (4 tsp) to a food processor. Mix until blended and crumbly.

Fill 5 ramekins with the peaches filling.

Add the topping and bake for 20-25 minutes, or until your house smells amazing and the fruit in the ramekins starts to bubble.

Let stand for a few minutes to cool before serving.

Top with a scoop of Vegan Vanilla Ice Cream (to taste) for the full effect. Enjoy!
