Step 1
Preheat the oven to 350 degrees F (180 degrees C).

Slice the
Peaches (3 1/2 cups)
thinly, leaving the skin on for texture.
Step 3
In a large bowl, add the peaches,
Ground Cinnamon (1/2 tsp)

Vanilla Extract (1/2 tsp)

Chickpea Flour (1 Tbsp)

Lemon Juice (1 tsp)
,
Agave Syrup (1/2 Tbsp)
, and
Salt (1 pinch)
. Mix well but ensure the peaches stay intact.
Step 4
Add the
Oats (3/4 cup)
,
Ground Flaxseed (2 Tbsp)
,
Chickpea Flour (2 Tbsp)
,
Slivered Almonds (1/3 cup)
,
Vanilla Extract (1/2 tsp)
,
Agave Syrup (1/2 Tbsp)
, and
Water (1 1/2 Tbsp)
to a food processor. Mix until blended and crumbly.
Step 5
Fill 5 ramekins with the peaches filling.
Step 6
Add the topping and bake for 20-25 minutes, or until your house smells amazing and the fruit in the ramekins starts to bubble.
Step 7
Let stand for a few minutes to cool before serving.
Step 8
Top with a scoop of
Vegan Vanilla Ice Cream (to taste)
for the full effect. Enjoy!
