Preheat the oven to 350 degrees F (180 degrees C).
Slice the Peach (3 1/2 cup) thinly, leaving the skin on for texture.
In a large bowl, add the peaches, Ground Cinnamon (1/2 teaspoon), Vanilla Extract (1/2 teaspoon), Chickpea Flour (1 tablespoon), Lemon Juice (1 teaspoon), Agave Syrup (1/2 tablespoon), and Salt (1 pinch). Mix well but ensure the peaches stay intact.
Add the Oats (3/4 cup), Ground Flaxseed (2 tablespoon), Chickpea Flour (2 tablespoon), Slivered Almonds (1/3 cup), Vanilla Extract (1/2 teaspoon), Agave Syrup (1/2 tablespoon), and Water (1 1/2 tablespoon) to a food processor. Mix until blended and crumbly.
Fill 5 ramekins with the peaches filling.
Add the topping and bake for 20-25 minutes, or until your house smells amazing and the fruit in the ramekins starts to bubble.
Let stand for a few minutes to cool before serving.
Top with a scoop of Vegan Vanilla Ice Cream (to taste) for the full effect. Enjoy!
