Preheat oven to 425 degrees F (220 degrees C).

In a frying pan, lightly fry Streaky Bacon (6 slices), stirring occasionally for a few minutes until it's cooked to your liking.

Once the bacon is cooked, transfer it to a plate lined with an absorbent paper towel to soak up any excess grease.

Place your Potatoes (4.4 lb) in a parchment-lined baking pan. Using a fork, make prick marks on both surface sides of each potato. The vent holes help the steam to escape whilst baking the potatoes.

Drizzle each potato with Olive Oil (as needed). Using your hands rub the surface of each potato. Season with Salt (to taste) and Ground Black Pepper (to taste).

Bake in the oven 40-45 minutes, or until potatoes are cooked all the way through.

Once baked, cut each potato into quarter pieces, and chop potatoes into bite-sized chunks.

Assemble your Baked Potato Casserole. Lightly grease a large oven-proof baking dish with Nonstick Cooking Spray (as needed). Lay in 1/2 of the chopped-up potatoes, dollop over, and spread Sour Cream (1 1/4 cups).

Sprinkle over half of the bacon and Cheddar Cheese (2 cups). Top of with the remaining potatoes.

Using the back of a cooking spoon, give the potatoes a squish down. This helps to make sure that everything will be nicely compacted and fit properly.

Spread the remaining Sour Cream (1 1/4 cups) on top, and sprinkle the remaining bacon and Cheddar Cheese (2 cups).
