Cooking Instructions

Step 1
Preheat oven to 425 degrees F (220 degrees C).
Step 2
In a frying pan, lightly fry Wright® Brand Smoked Bacon (6 slices) , stirring occasionally for a few minutes until it's cooked to your liking.
Step 3
Once the bacon is cooked, transfer it to a plate lined with an absorbent paper towel to soak up any excess grease.
Step 4
Place your Potatoes (13 1/3 cups) in a parchment-lined baking pan. Using a fork, make prick marks on both surface sides of each potato. The vent holes help the steam to escape whilst baking the potatoes.
Step 5
Drizzle each potato with Olive Oil (as needed) . Using your hands rub the surface of each potato. Season with Salt (to taste) and Ground Black Pepper (to taste) .
Step 6
Bake in the oven 40-45 minutes, or until potatoes are cooked all the way through.
Step 7
Once baked, cut each potato into quarter pieces, and chop potatoes into bite-sized chunks.
Step 8
Preheat the oven to 350 degrees F (180 degrees C).
Step 9
Assemble your Baked Potato Casserole. Lightly grease a large oven-proof baking dish with Nonstick Cooking Spray (as needed) . Lay in 1/2 of the chopped-up potatoes, dollop over, and spread Sour Cream (1 1/4 cups) .
Step 10
Sprinkle over half of the bacon and Cheddar Cheese (2 cups) . Top of with the remaining potatoes.
Step 11
Using the back of a cooking spoon, give the potatoes a squish down. This helps to make sure that everything will be nicely compacted and fit properly.
Step 12
Spread the remaining Sour Cream (1 1/4 cups) on top, and sprinkle the remaining bacon and Cheddar Cheese (2 cups) .
Step 13
Bake in the oven for 30-35 minutes or until the cheese on top is melted and gooey.
Step 14
Serve as a side dish. Enjoy!
