Add Raw Cashews (1/2 cup), Medjool Dates (14), Dry Roasted, Unsalted Peanuts (1/4 cup), Unsweetened Cocoa Powder (1/4 cup), and Peanut Butter (2 tablespoon) to bowl of food processor, blend for 1 minute.
Line an 8x8 square dish with plastic wrap, remove mixture from food processor bowl and smooth into even layer. Then use a slightly damp spatula to create a smooth finish.
Chop Raw Cashews (2 tablespoon), then sprinkle across the bars. Place another piece of plastic wrap over the bars and press the cashew pieces down into the bars.
Refrigerate 15-20 minutes, then remove plastic and bars from 8x8 pan and cut into 12 even bars.
Store in airtight container in refrigerator for up to one week.
