Step 1
To a small jug, add
Sweetened Condensed Milk (1 1/3 cups)
and Melted
Butter (1/4 cup)
Stir together until combined.
Step 2
Crush
Graham Crackers (3 cups)
in a food processor, then add to a large mixing bowl along with
Unsweetened Shredded Coconut (1 cup)
. Stir. Pour in the condensed milk mixture and mix to combine.
Step 3
Grease and line a brownie tray with non-stick baking paper. Press cookie mixture into base.Chill cookie base in fridge.
Step 4
Heat
Milk (1/4 cup)
in microwave until hot and add
Instant Coffee (2 Tbsp)
. Mix together.
Step 5
In a large bowl with
Butter (1 cup)
, sift
Powdered Confectioners Sugar (3 cups)
. Next, using a hand mixer, cream butter with sugar for 5 minutes. Beat in cold coffee mixture.
Step 6
Transfer topping onto base and smooth to cover all of the pressed cookie. Cool in fridge for 20 minutes or until set.
Step 7
Serve cubed and enjoy!
