In a large saucepan over medium heat, add Oil (1 tablespoon). Cook Yellow Onion (1) for 2-3 minutes, until soft and translucent.
Add in Ground Beef (500 gram) and cook for 4-5 minutes, stirring occasionally.
Add Canned Diced Tomatoes (400 gram), Red Kidney Beans (15.5 ounce), Taco Seasoning (35 gram), Cream of Chicken Soup (10.5 ounce) and Water (1/2 cup). Mix together. Let simmer for 5-10 minutes, or until the mixture has thickened slightly.
In a lightly greased oven-proof casserole dish, cover the bottom with Corn Chips (300 gram), followed by half of the beef mixture and half of the Cheese (2 cup). Repeat the layers once more.
Cover dish with foil. Bake at 160 degrees C (325 degrees F) for 20-30 minutes, or until the top is bubbly.
Allow casserole to stand for 5-10 minutes to cool.
Serve with Sour Cream (to taste) and Salsa (to taste) and enjoy!
