In a large saucepan over medium heat, add
Oil (1 Tbsp)
Yellow Onion (1)
for 2-3 minutes, until soft and translucent.
Ground Beef (1.1 lb)
and cook for 4-5 minutes, stirring occasionally.
Canned Diced Tomatoes (1 3/4 cups)
Red Kidney Beans (2 1/2 cups)
Taco Seasoning (1/4 cup)
Cream of Chicken Soup (10.5 oz)
Water (1/2 cup)
. Mix together. Let simmer for 5-10 minutes, or until the mixture has thickened slightly.
In a lightly greased oven-proof casserole dish, cover the bottom with
Corn Chips (8 1/3 cups)
, followed by half of the beef mixture and half of the
Cheese (2 cups)
. Repeat the layers once more.
Cover dish with foil. Bake at 160 degrees C (325 degrees F) for 20-30 minutes, or until the top is bubbly.
Allow casserole to stand for 5-10 minutes to cool.
