Taco Casserole

Taco Casserole is a simple main dish, perfect for easy weeknight dinners, Super Bowl parties or kid’s sleepovers. Baked until bubbling then topped with sour cream and salsa dip, this gorgeous dinner will keep everyone happy!

Ground Beef

Small Yellow Onion , chopped

Canned Diced Tomatoes

Red Kidney Beans , rinsed, drained

Cream of Chicken Soup

Water

Taco Seasoning

Corn Chips , crushed

Cheese , grated

Cooking Instructions

In a large saucepan over medium heat, add Oil (1 Tbsp) . Cook Yellow Onion (1) for 2-3 minutes, until soft and translucent.

Add in Ground Beef (1.1 lb) and cook for 4-5 minutes, stirring occasionally.

Add Canned Diced Tomatoes (1 3/4 cups) , Red Kidney Beans (2 1/2 cups) , Taco Seasoning (4 Tbsp) , Cream of Chicken Soup (10.5 oz) and Water (1/2 cup) . Mix together. Let simmer for 5-10 minutes, or until the mixture has thickened slightly.

In a lightly greased oven-proof casserole dish, cover the bottom with Corn Chips (8 1/3 cups) , followed by half of the beef mixture and half of the Cheese (2 cups) . Repeat the layers once more.

Cover dish with foil. Bake at 160 degrees C (325 degrees F) for 20-30 minutes, or until the top is bubbly.

Allow casserole to stand for 5-10 minutes to cool.

Serve with Sour Cream (to taste) and Salsa (to taste) and enjoy!
