Freshly Ground Black Pepper
Preheat the oven to 475 degrees F (250 degrees C).
Place Lamb (1 lb) on a parchment-lined (for easy clean-up) rimmed baking sheet. Season with Kosher Salt (to taste) and Freshly Ground Black Pepper (to taste) on all sides.
Mix together Mayonnaise (2 Tbsp), Yellow Mustard (1/2 Tbsp) and Fresh Herbs (1/2 Tbsp). Spread in an even layer across the rack of lamb — you might not need it all.
Place pan in the oven and bake for 10 minutes.
Reduce heat to 400 degrees F (200 degrees C) and bake for 10 more minutes.
Take the pan out of the oven and place lamb on a board to rest for AT LEAST 10 minutes. Cut and serve.
