Preheat the oven to 475 degrees F (250 degrees C).
Place Lamb (1 pound) on a parchment-lined (for easy clean-up) rimmed baking sheet. Season with Kosher Salt and Freshly Ground Black Pepper (to taste) on all sides.
Mix together Mayonnaise (2 tablespoon), Yellow Mustard (2 teaspoon) and Fresh Herbs (2 teaspoon). Spread in an even layer across the rack of lamb — you might not need it all.
Place pan in the oven and bake for 10 minutes.
Reduce heat to 400 degrees F (200 degrees C) and bake for 10 more minutes.
Take the pan out of the oven and place lamb on a board to rest for AT LEAST 10 minutes. Cut and serve.
