Step 1
Preheat the oven to 475 degrees F (250 degrees C).
Step 2
Place Lamb (1 lb) on a parchment-lined (for easy clean-up) rimmed baking sheet. Season with Kosher Salt (to taste) and Freshly Ground Black Pepper (to taste) on all sides.
Step 3
Mix together Mayonnaise (2 Tbsp) , Yellow Mustard (1/2 Tbsp) and Fresh Herbs (1/2 Tbsp) . Spread in an even layer across the rack of lamb — you might not need it all.
Step 4
Place pan in the oven and bake for 10 minutes.
Step 5
Reduce heat to 400 degrees F (200 degrees C) and bake for 10 more minutes.
Step 6
Take the pan out of the oven and place lamb on a board to rest for AT LEAST 10 minutes. Cut and serve.
